The coffee beans are spread out by hand on a ‘barbecue’ sundeck using a highly labor-intensive process. Depending on the sun, they are left to dry for between 5 to 8 days, and must be constantly turned by hand. This makes the water content drop from 45% to around 12%. The coffee is then bagged and is aged for another 6 to 8 weeks.
The coffee is then un-bagged and graded for their size and quality by highly experienced coffee graders. Only the best beans survive the entire labor-intensive process and are approved to carry the name, Jamaica Blue Mountain Coffee.
About 85% of the beans are good enough for export. Jamaican processors proudly know that they have a perfect coffee and they put their heart and soul into ensuring the superior quality of the beans carries the name of the Blue Mountain Coffee appropriately.
Besides, to maintain the high-quality standards JACRA educates the growers and processors by establishing clear rules for the growing, processing, harvesting, and roasting of the coffee. Every single ounce of coffee must be presented to this licensing authority and it is the only organisation that exports the coffee out of Jamaica.
